Like Champagne or San Marzano tomatoes, Hatch chiles refer to peppers grown only in the Hatch Valley of New Mexico. Early bakers in the San Francisco area used to think that sourdough bread with its distinct tartness could only be made there. Coddies are the much less well known cousin of the crab cake. Served all over Baltimore since the early 1900s, they're little fried cakes made from rehydrated salt cod and mashed potatoes that are served on crackers with mustard. It's a simple, working-man's food that has fallen to the wayside of the crab cake. There are still restaurants serving them and shipping them however, including Pappas Seafood Co. in a Baltimore suburb.

A favorite all over the South, pimento cheese is a spread or sandwich filling that's made by mixing grated or chopped cheese with mayonnaise, chopped red pimento peppers, and seasonings.
