2. Baked Ziti

I don’t believe in a lot, but I believe in baked ziti. The enchantment of saucy, cheesy pasta meets crusty, golden edges in the best way in this classic Italian-American dish. Hit it with a little parsley and eat it fresh out of the oven. Mama mia.

5. Taco Casserole

There aren’t many recipes in this world as comforting as a melty taco casserole. This is the type of recipe to get liberal with cheese; the meltier the better. Don’t forget to top with plenty of fresh avocado, and if you don’t have a bag of your favorite chips on hand for dipping, you’re doing it wrong.

8. Grilled Cheese & Tomato Soup Dumplings

You’ll need a deep fryer, or at least a pot big enough to fully submerge these in oil. These are shockingly easy to make; I made them once for a party and they were a major hit, if I do say so myself. Just make sure you don’t try to get too cheffy with this. You need white bread (Wonder is best) and cheddar.

9. Cheesy Pumpkin Nuggets

I can’t say I’ve ever partaken in such a treat as a cheesy pumpkin nugget, but those are three of my favorite words and I’m highly intrigued. Like the dumplings, the more space you have to fry the better.

11. Saag Paneer

If you’ve got some Indian paneer cheese, there are few recipes more comforting than saag paneer to use it in. Indian cooking is about layering multiple levels of flavor, so be patient. It’s worth it.

12. Grillades and Cheesy Grits

This classic Creole recipe is a great plate of food to drown your sorrows into. Cheesy grits can really heal the soul, and when you hit ‘em with tender top round, cooked low and slow… 


My mind’s gone blank. All I can think about now is grillades and grits.

13. Cacio e Pepe
