11 Easy Rotisserie Chicken Dinners Made With Only Costco Ingredients

Costco's beloved $5 rotisserie chickens are a great, inexpensive starting point for planning a meal. The problem? Many of the recipe ideas floating around the internet require a lot more cooking and extra ingredients that you can't get at Costco, leading to a trip to another grocery store. To make dinner time actually quick and easy, we put together simple recipes using a $5 Costco rotisserie chicken, a few more ingredients you can buy at Costco, and pantry staples like condiments and seasonings that you probably have at home. Here are some family-friendly recipes that start with a Costco rotisserie chicken and require minimal time and effort.

Buy: Russet potatoes, Sweet Baby Ray's, shredded cheddar

The russet potatoes in Costco's bag are always huge, so they make a full meal when loaded with barbecue chicken. Use your favorite method to bake the potatoes, and shred the chicken meat while they're in the oven. Mix it with some barbecue sauce, pile it on top of a split potato, and top with shredded cheddar. Pop it back into the oven to heat it through and melt the cheese.

Buy: Kirkland Signature Caesar salad kit, large tortillas, fresh tomatoes

Sure, you can just add shredded rotisserie chicken to the caesar salad and call it a day, but it somehow feels more like a meal when you mix it all up with the dressing and wrap it in a soft tortilla. Chopped tomatoes (or cukes! Bell peppers! Carrots!) give it some more substance. Don't skip squirting fresh lemon juice on the salad, either.

Buy: Kirkland Signature artisan rolls, sliced deli ham, sliced Swiss cheese

The ciabatta-style rolls are fabulous for hot sandwiches because they hold everything together so well. Spread some of your favorite Dijon mustard on the roll, then layer on shredded rotisserie chicken, a couple slices of ham, and Swiss cheese on top. Pop it in the oven or air fryer for a couple minutes to get the roll crusty and the cheese melted.

Buy: Premade macaroni and cheese, Frank's RedHot

This one's pretty self explanatory, but always a big hit. Prepare some quality premade mac and cheese, like Panera, according to the package directions. Then top with chunks of rotisserie chicken tossed in Frank's hot sauce. Some crumbles of bleu cheese and a drizzle of ranch are both welcome additions, but not necessary.

Buy: Romaine hearts, marinated artichoke hearts, pickled vegetables, fresh mozzarella, Olive Garden Italian dressing

You can really let your creativity go wild in an antipasto salad, and Costco has plenty to choose from. Shred or chop some chicken, then toss with goodies like drained marinated artichoke hearts, pickled vegetables, and chunks of mozzarella. Chop the romaine and toss with some of the Olive Garden dressing before topping it with the mix. Other delicious Costco additions: olives, sliced salami, cherry tomatoes, cucumber, and shaved red onions.

Buy: Tortilla strips, Queso Mama White Queso, Wholly Guacamole, Mateo's Salsa, tomatoes

Who doesn't love an indulgent nacho bar? Just heat up some of the white queso (you can even throw it in one of those little slow cookers to keep it warm) and set out bowls of guacamole, salsa (we're partial to Mateo's), chopped tomatoes, and shredded rotisserie chicken tossed with a little taco seasoning or chili powder. Sour cream, hot sauce, lettuce, and onions are all optional but easy additions. 

Buy: Boursin, sun-dried tomatoes in olive oil, fresh spinach, pasta

Boil short cut pasta like penne until al dente and save at least a cup of the starchy cooking liquid. In a big skillet, saute a few spoonfuls of sun-dried tomatoes and the olive oil it's packed it — that'll help flavor the whole dish — until it's heated through. Add some shredded rotisserie chicken, one 5.2-ounce package of garlic and herb Boursin cheese, and some of the pasta water. Mix it around until the cheese melts and a creamy sauce forms, then add the cooked pasta and a few handfuls of spinach. Cook until the sauce has thickened and the spinach is wilted. Some Parmesan, garlic, or onions couldn't hurt, either.

Buy: Pita bread, Hannah Tzatziki, cherry tomatoes, cucumbers

The shredded chicken in a Greek-style pita sandwich doesn't need any more seasoning than what Costco already puts on it. That's because of the creamy, refreshing tzatziki — though you can use your favorite hummus from Costco instead. Wrap the chicken, tzatziki, and chopped tomatoes and cucumbers in a warmed pita for a filling, healthy meal. A squeeze of lemon, red onions, or feta cheese would all be good additions.

Buy: Stonefire Naan, Rao's Marinara, Kirkland Signature Basil Pesto, mozzarella

Stonefire naan makes a great base for an easy flatbread. Smear some of Rao's jarred marinara sauce on it, spread some shredded chicken on, sprinkle some shredded mozzarella, and drizzle with pesto. Pop it in the oven until the naan is lightly browned and crunchy and the cheese is bubbly and golden. If you'd rather have a chicken parm casserole, mix the sauce and chicken with cooked pasta, top with cheese and a drizzle of pesto, and bake until browned.

Buy: Frozen riced cauliflower, broccoli florets, Bachan's Japanese Barbecue Sauce

Use frozen riced cauliflower as the base for an Asian bowl meal. Cook it according to package directions, then top it with steamed or roasted broccoli florets, shredded chicken, and a hefty dose of Bachan's barbecue sauce on top. It's relatively low carb this way, but you can substitute cooked rice for the cauliflower. A sprinkle of sesame seeds or furikake are effortless additions that look and taste great.

You can make caprese chicken sandwiches either hot or cold, but either way, make them on Costco's amazing baguettes from the bakery. Spread pesto generously on the split baguette, then top with shredded chicken, sliced tomatoes (don't forget to season them with salt and pepper), and fresh mozzarella slices. Pop it open-faced into the oven just until the cheese melts if you prefer it warm.
