Parked at an abandoned Shell gas station, the Tacos La Pasadita food truck is a hidden gem for authentic Mexican dishes. The friendly roadside taquería serves fresh and "unbelievably delicious" all-day breakfast burritos, tacos, tamales, and weekends-only menudo (pork and tomato stew). After ordering a ham, bacon, sausage, or chorizo breakfast burrito, grab some homemade salsa inside the converted gas station and dine at one of the picnic tables outside. It's worth the drive or at least a stop if you're passing through on Interstate 70 on the way to Arches National Park. Says one fan: "Legitimately one of the best breakfast burritos I've ever had in my entire life. If you ever pass through Green River, this place is an absolute must!"

Coming in to La Mexicana in the morning makes it weird to shop its extensive array of desserts, but breakfast is also all-day at this mom-and-pop shop not far from Washington, D.C., where The Washingtonian says the entire menu of Mexican savories "isn’t to be missed." There's carne asada, pico de gallo, refried beans, melted cheese, and sour cream in the California burrito as well as eggs and crispy fries, which presents a problem whatever time you get it: leaving room for dessert.

The Elvis-themed hot spot buzzes with diners daily. On Wednesdays, there's a special with all-you-can-eat breakfast burritos. The famous hefty Rocky Mountain breakfast burrito folds eggs, hash browns, and choice meat: sausage, ham, or bacon (or all three if you'd like) into a tortilla, then it's smothered with green/red chili and topped with cheese. There are also chorizo, steak, German sausage, and vegetarian breakfast burritos available.
